Coconut BLT

BLTs were always one of my favorite sandwiches from my carnistic, meat-eating days! Thank goodness there are many varieties and different takes on the vegan ‘BLT’, Coconut-flake Bacon Lettuce Tomato Sandwiches are one of many. This is a really great tasting, super easy, and really practical dish, though. Enjoy!

Ingredients:

  • Lettuce 
  • Coconut Flakes 
  • Tomato 
  • Bread 
  • Liquid Smoke 
  • Soy Sauce or Tamari
  • Agave Nectar

Instructions:

Mix the Coconut Flakes with the Agave Nectar, Liquid Smoke, and Soy Sauce (or Tamari). This step is where the bacon flavor gets made! 

The ratio I prefer is 3 parts Agave Nectar, 2 parts Soy Sauce, and 1 Liquid Smoke

2. Bake Coconut Flakes in the oven at 350℉ for 10-15 minutes or until slightly brown, checking every five minutes or so. To cook them consistently, don’t pile them too much and move them around every few minutes.

3. Toast Bread. 

4. Cut Lettuce. 

5. Cut Tomato. 

6. Put it all together and enjoy!
